As Rollertown grew from a neighborhood brewery into a larger production facility and entertainment venue for the Frisco, Texas community, they turned to the Middleby Brewing & Distilling Solutions Group for a complete, coordinated equipment solution. Middleby brought together the expertise of Ss Brewtech, Deutsche Beverage + Process, and Wild Goose Filling to deliver an integrated platform spanning pilot brewing, full-scale production brewing, and packaging. With one trusted point of contact, Rollertown was able to simplify a complex project involving multiple equipment types, lead times, and engineering requirements. Middleby’s team worked closely with Rollertown throughout the process, helping guide early planning, equipment layout, production flow, and installation coordination. The result was a turnkey solution backed by expert engineering and long-term support.
Production Brewhouse and Fermentation — Deutsche Beverage + Process delivered Rollertown’s core brewing and fermentation platform built to support consistent, high-volume production. At the heart of the system is a 30 BBL, four-vessel (Steam-Jacketed Mash Tun, Lauter Tun, Brew Kettle, Whirlpool, 60BBl HLT and 90BBL CLT) brewhouse with a custom platform, integrated CIP, dual-stage heat exchanger, and advanced automation (Auto knockout, auto blending, auto transfer,auto fill,boil-over protection,pneumatic valves,temperature monitoring, spent grain management, and more, all with remote access) designed to make brew days smoother and more repeatable. Deutsche also supplied the supporting cellar infrastructure, including 30 - 120 BBL horizontal lager tanks, 60 - 120 BBL bright tanks, a yeast propagation tank, a jacketed mixing tank, and a dedicated CIP system; along with boiler, chiller, silo, mill, and auger. Features like innovative grain handling and advanced automation help the brew team meet production demands with the capacity, control, and repeatability needed to scale production while protecting product quality.
Pilot Brewhouse and Fermentation — Complementing the Deutsche production platform is a 1 bbl Ss Brewtech Electric Brewhouse built for Rollertown's pilot program, the team's dedicated space for testing new hops, developing recipes, and dialing in formulations before they reach the main system. Engineered from the ground up as a professional-grade nano brewhouse rather than scaled-up homebrew gear, the cart-mounted, fully mobile system pairs frame-mounted components and a brewer-centric valve tree with a reimagined control panel and touch controllers for precise, repeatable small-batch results. Paired with a collection of 1 bbl Ss Brewtech unitanks, it gives Rollertown's brewers a true end-to-end platform: the flexibility to experiment freely and the confidence to scale whatever earns a tap handle.
Inline Canning System — Prior to their expansion,Rollertowncanned beer using a small Wild Goose Gosling canning system with one fill head at 12 cans per minute. To support their increasing production, they upgraded to a five-head Wild Goose Evolution Series WG5 canning system, reducing their time spent canning while scaling up their packaging capacity to 50 cans per minute. As a brewstillery making their own spirits and cocktails,Rollertownuses the canning system's Multiflow Control fill technology to can higher carbonation beverages like RTDs alongside their variety of beers. Wild Goose also facilitated theintegration ofauxiliary packaging equipment, including machinery for depalletization and labeling, to provide a fully-automated, complete packaging linethat helps theRollertownteam keep up with their increased canning capacity without extra packaging labor.
